Our values are enclosed in the letters of the word osteria: hospitality, simplicity, tradition, experience, refreshment, informality and friendship.
Our mission is to preserve and offer the traditional recipes and the typical cuisine of these places, which has its roots in its history and in the landscape itself (hills, mountain pastures, Dora Baltea river basin).
Traditional dishes are therefore to be found as the dishes of the day, not always readily available in classic restaurants. Simplicity in the service, which means our dishes are served in the characteristic copper pans, and maximum care in everything that is home-made (including agnolotti, fresh pasta, desserts, …)
“We are what we eat”: this is why we use only local meat, cold cuts, cheeses and wines, as well as all ingredients and fresh vegetables, according to the season and whenever possible, are provided by small local producers.
